Peanut Butter Pie - 1st Day of Halloween Treats

 

Ingredients

Crust
  • 5/6 cup of flour
  • 2 tablespoons sugar
  • 1/6 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup of cold butter (if using salted, exclude the salt)
  • 3-4 tablespoons of ice cold water
Filling
  • 8 oz cream cheese
  • 1 cup creamy peanut butter
  • 1/2 cup heavy whipping cream
  • 1 teaspoon vanilla
  • 4 oz cool whip (half a tub)
  • 1/2 teaspoon salt
  • 1 1/4 cup powdered sugar
  1. Combine dry crust ingredients until well combined. Cube up butter and cut in until incorporated to the point where the mixture clumps in your hand, but pea-sized bits of butter can still be found. (do not overmix)
  2. Slowly add in your water but be sure the dough is not wet. Pour onto some wrap and clump/wrap it up and place in the fridge for at least 30 minutes. 
  3. Once hydrated, pull out your crust, roll it out, and place in a pie pan.
  4. Do your edges and place aluminum foil or parchment paper on your crust and add pie weights (sugar, rice, and/or beans also work). 
  5. Bake at 350 for 15 minutes. (I place mine in the freezer while the oven is preheating)
  6. For the filling, combine cream cheese and peanut butter. Then add in heavy cream and vanilla. 
  7. Once mixed, add in cool whip and combine. 
  8. Now add the salt and sugar and mix until well combined. 
  9. Scoop your filling into your pie pan and smooth. Top with whatever your heart desires - Reese's pieces and the mini white chocolate cups are my favorite- and place in the fridge to chill overnight. 
  10. Enjoy!
