Monkey Bread Bites
Ingredients
Bread
- 1 1/2 cups warm whole milk
- 2 1/4 teaspoons yeast
- 2 tablespoons white sugar
- 2 tablespoons brown sugar
- 2 eggs
- 1/3 cup melted butter
- 2 teaspoons salt
- 1/2 teaspoon nutmeg
- 5 cups of flour
Coating
- 1/2 cup melted butter
- 1 1/4 cup white sugar
- 1 tablespoon cinnamon
Filling
- 1/4 cup melted butter
- 2/3 cup brown sugar
- 1 teaspoon vanilla
Icing
- 1 cup powdered sugar
- 2 tablespoons milk
Directions
- Combine milk, yeast, and both sugars and let rest for 15 minutes.
- Add in eggs, melted (and cooled) butter, salt, nutmeg, and 1 cup of flour.
- Once combined, slowly add in the other 4 cups of flour until a dough forms.
- Knead for a few minutes, until smooth, and place in a greased bowl. Cover and let rise for about 2 hours.
- Melt butter and mix sugar and cinnamon in a separate bowl.
- Mix filling ingredients and coat the inside of each mini muffin cup with it (I used silicone so they were easy to pop out - grease metal pans very well) Use only half of the filling.
- Make about 65-75 3/4-inch balls from the dough. Dip each in the butter and then the cinnamon sugar and place 2 in each mini muffin cup.
- Cover and let rest for about 30 minutes.
- Drizzle a bit of the filling in each of the cups and use the rest.
- Bake at 350 for about 20 minutes.
- Mix icing ingredients and drizzle over cooled monkey bread.
- Enjoy!
