Monkey Bread Bites

  

Ingredients

Bread

  • 1 1/2 cups warm whole milk
  • 2 1/4 teaspoons yeast
  • 2 tablespoons white sugar
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1/3 cup melted butter
  • 2 teaspoons salt
  • 1/2 teaspoon nutmeg
  • 5 cups of flour
Coating
  • 1/2 cup melted butter
  • 1 1/4 cup white sugar
  • 1 tablespoon cinnamon
Filling
  • 1/4 cup melted butter
  • 2/3 cup brown sugar
  • 1 teaspoon vanilla
Icing
  • 1 cup powdered sugar
  • 2 tablespoons milk

Directions

  1. Combine milk, yeast, and both sugars and let rest for 15 minutes.
  2. Add in eggs, melted (and cooled) butter, salt, nutmeg, and 1 cup of flour. 
  3. Once combined, slowly add in the other 4 cups of flour until a dough forms.
  4. Knead for a few minutes, until smooth, and place in a greased bowl. Cover and let rise for about 2 hours. 
  5. Melt butter and mix sugar and cinnamon in a separate bowl. 
  6. Mix filling ingredients and coat the inside of each mini muffin cup with it (I used silicone so they were easy to pop out - grease metal pans very well) Use only half of the filling.
  7. Make about 65-75 3/4-inch balls from the dough. Dip each in the butter and then the cinnamon sugar and place 2 in each mini muffin cup.
  8. Cover and let rest for about 30 minutes.
  9. Drizzle a bit of the filling in each of the cups and use the rest.
  10. Bake at 350 for about 20 minutes.
  11. Mix icing ingredients and drizzle over cooled monkey bread. 
  12. Enjoy!
