Coffee Cake with Crumb Topping
Ingredients
Cinnamon Filling
- 3/4 cup brown sugar
- 1/4 cup flour
- 1 tablespoon cinnamon
Topping
- 2/3 cup brown sugar
- 1 cup flour
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter
Cake
- 2 1/4 cup all purpose flour
- 2 tablespoons cornstarch
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 3/4 cup granulated sugar
- 3/4 cup butter
- 3/4 cup brown sugar
- 2 teaspoons vanilla
- 3 eggs
- 3/4 cup sour cream
- 1/4 cup whole milk
- 1 teaspoon Javy microdose coffee
Directions
- Combine ingredients for filling and set aside.
- Combine dry ingredients for topping and then cut in diced butter. Use fingers to squeeze and combine until the mixture is crumbly. Set in the fridge until ready to use.
- Start on the cake!
- Combine the dry ingredients and set aside.
- Cream together butter and granulated sugar until fluffy.
- Mix in brown sugar thoroughly.
- Add in vanilla and eggs, one at a time.
- Add sour cream, milk, and coffee and mix until just combined. Try not to overmix.
- Pour half of your batter into a cake pan, sprinkle on the filling, and top with the rest of the batter.
- Now crumble on your topping and bake at 350 for 50-55 minutes.
- Enjoy!

Thank you for sharing, I must will try this coffee cake next time. I love coffee! I am used to using coffee capsule, I make my own coffee capsules with a k cup & nespresso coffee capsule filling sealing machine. But I am trying new ways to enjoy coffee recently
