Coffee Cake with Crumb Topping

 

Ingredients

Cinnamon Filling
  • 3/4 cup brown sugar
  • 1/4 cup flour
  • 1 tablespoon cinnamon
Topping
  • 2/3 cup brown sugar
  • 1 cup flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter
Cake

  • 2 1/4 cup all purpose flour
  • 2 tablespoons cornstarch
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup granulated sugar
  • 3/4 cup butter
  • 3/4 cup brown sugar
  • 2 teaspoons vanilla
  • 3 eggs
  • 3/4 cup sour cream
  • 1/4 cup whole milk
  • 1 teaspoon Javy microdose coffee 

Directions

  1. Combine ingredients for filling and set aside.
  2. Combine dry ingredients for topping and then cut in diced butter. Use fingers to squeeze and combine until the mixture is crumbly. Set in the fridge until ready to use.
  3. Start on the cake!
  4. Combine the dry ingredients and set aside.
  5. Cream together butter and granulated sugar until fluffy. 
  6. Mix in brown sugar thoroughly. 
  7. Add in vanilla and eggs, one at a time.
  8. Add sour cream, milk, and coffee and mix until just combined. Try not to overmix.
  9. Pour half of your batter into a cake pan, sprinkle on the filling, and top with the rest of the batter. 
  10. Now crumble on your topping and bake at 350 for 50-55 minutes. 
  11. Enjoy!

  1. Thank you for sharing, I must will try this coffee cake next time. I love coffee! I am used to using coffee capsule, I make my own coffee capsules with a k cup & nespresso coffee capsule filling sealing machine. But I am trying new ways to enjoy coffee recently
