Blind Baking Pie Crust

 Instructions

  1. Prepare a baking dish with pie crust. I tend to avoid folding the excess under depending on the pie dish as it can weigh it down and the pie crust can "melt" down the side. If you have a pie dish with a thick edge, fold the edges and lay them on top of the edge. 
  2. Preheat oven to 400. 
  3. While the oven is preheating - put your pie dish (with pie crust) in the freezer. 
  4. When the oven is heated, pull the crust out and poke some holes. 
  5. Now place aluminum foil on the pie crust and up the edges and fill with pie weights (sugar, dry beans/rice also work great). 
  6. Throw the pan in the oven for about ten minutes. 
  7. Remove the weights and foil and bake for another 2 minutes!
