Lemon Pepper and Garlic Pasta

 

Ingredients

  • 1 box of your favorite pasta
  • 1 lemon
  • 1 clove of garlic
  • Olive oil
  • Pepper
  • 1/2 cup of shredded parmesan (45 g)
  • 1/4 cup melted butter (60 g)
  • 1 teaspoon pepper (2.3 g)
  • 1 tablespoon freshly chopped parsley (3.8 g)
  • 1/4 cup heavy cream (2.12 oz)
  • Zest from 1 lemon
  • Grated Parmesan

Directions

  1. Cut top 1/4-inch off of the clove and garlic and cut the lemon in half. Put the garlic and the two lemon halves each in their own aluminum foil boat. Pour 2 tablespoons of olive oil over garlic and a tablespoon of olive oil over each lemon half. Add pepper to each lemon half. Wrap everything up in aluminum foil and bake at 375 for 30 minutes. Remove lemon halves and turn the oven to 400 to roast the garlic for another 15-20 minutes. 
  2. Cook your box of pasta as instructed on the box. 
  3. place shredded parmesan  in a large baking dish (likely the one you baked your lemon and garlic in). 
  4. Squeeze in lemons and mix in butter. 
  5. Add your cooked pasta and add in pepper, parsley, heavy cream, and lemon zest.
  6. Squeeze in your roasted garlic, mix, and top with some grated parmesan.
  7. ENJOY!
