S'mores Pie
Ingredients
Graham Cracker Crust
- 1 1/2 cup of crushed graham crackers
- 1 tablespoon brown sugar
- 2 tablespoons white sugar
- 1/2 cup melted butter
Chocolate Pie Filling
- 2 cups white sugar
- 5 tablespoons cocoa powder
- 1/4 cup flour
- 1 can evaporated milk (12 fl. oz)
- 1 teaspoon vanilla extract
- 4 egg yolks
- 4 tablespoons butter
Marshmallow Meringue Topping
- 4 egg whites
- 1 cup white sugar
- 1/2 teaspoon cream of tartar
- 1 teaspoon vanilla
Instructions
- Combine all ingredients of graham cracker crust and pat into a pie pan, using your fingers for the sides. I prefer to let it chill for 10-15 minutes and then pop it in the oven at 375 for 7-10 minutes.
- Combine all filling ingredients into a large pot, turn on medium-high heat and mix until butter is melted.
- Allow graham cracker crust to chill in the fridge or freezer after baking, then add your filling and bake at 350 for 40 minutes.
- Use a double boiler or heat safe boil over simmering water - mix all meringue ingredients, other than the vanilla, in that boil and keep mixing over simmering water for 4 minutes or until it is no longer grainy/165F.
- Mix at high speed for about 5 minutes in a kitchen aid or use anything you've got, and mix until you get stiff, glossy peaks.
- Top your pie with the meringue topping- broil for a few minutes or use a kitchen torch to toast your marshmallow.
