S'mores Pie

Ingredients

Graham Cracker Crust

  • 1 1/2 cup of crushed graham crackers
  • 1 tablespoon brown sugar
  • 2 tablespoons white sugar
  • 1/2 cup melted butter

Chocolate Pie Filling

  • 2 cups white sugar
  • 5 tablespoons cocoa powder
  • 1/4 cup flour
  • 1 can evaporated milk (12 fl. oz)
  • 1 teaspoon vanilla extract
  • 4 egg yolks
  • 4 tablespoons butter

Marshmallow Meringue Topping

  • 4 egg whites
  • 1 cup white sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla

Instructions
  1. Combine all ingredients of graham cracker crust and pat into a pie pan, using your fingers for the sides. I prefer to let it chill for 10-15 minutes and then pop it in the oven at 375 for 7-10 minutes. 
  2. Combine all filling ingredients into a large pot, turn on medium-high heat and mix until butter is melted. 
  3. Allow graham cracker crust to chill in the fridge or freezer after baking, then add your filling and bake at 350 for 40 minutes. 
  4. Use a double boiler or heat safe boil over simmering water - mix all meringue ingredients, other than the vanilla, in that boil and keep mixing over simmering water for 4 minutes or until it is no longer grainy/165F. 
  5. Mix at high speed for about 5 minutes in a kitchen aid or use anything you've got, and mix until you get stiff, glossy peaks.
  6. Top your pie with the meringue topping- broil for a few minutes or use a kitchen torch to toast your marshmallow. 
  7. Enjoy and be happy!
